Instructor Bio

M. Elizabeth Joseph is a native Southerner and a gifted teacher. She worked professionally in kitchens, college classrooms, archives and museums. She began heirloom baking in 1979 and apprenticed with renowned community cooks and restaurants throughout the American Deep South. She specializes in award-winning Southern baking, American Southern and Creole Cuisines. She enjoys researching folk culture & foodways and discovering the cross-pollination of history & cuisine. Her Southern Courses inspire students of all ages using heritage foods, heirloom Southern favorites, fresh herbs, regional history and period music. She is currently exploring Floribbean and Sephardic Cuisines. She lives on the outskirts of Atlanta with her husband and children. Her food philosophy is: heirloom, seasonal, uncompromised quality, whole, nourishing -- and nodding towards her Creole roots -- always well seasoned.
